fix(deps)!: patch x/crypto vulnerabilities (#4832)

- Upgrade x/crypto and its required dependency versions
- Align documentation and CI with the required Go version

BREAKING CHANGE: Go 1.26 or later is now required by x/crypto v0.56.0. Upgrade the Go toolchain before building Gin.
