Tom Gabsow 2893b8adde MOD-19794: Fix macOS module builds to link against the selected SDK (#15981 )

Backport #15975 to Redis 8.4 for MOD-19794. The hard-coded
CommandLineTools SDK path can select SDK 27 even when Xcode selects SDK
26.5, failing macOS module linking with `tapi error: malformed file` /
`unknown architecture`.

Use `xcrun --show-sdk-path` and fail clearly if SDK resolution fails.
Applied to the 3 affected Makefile(s) present on this branch:
`modules/vector-sets/Makefile`, `src/modules/Makefile`,
`tests/modules/Makefile`.

Validation: all affected module targets built locally with SDK 26.5;
dry-run link commands verified with unset, named (`macosx`), and
absolute SDKROOT; failed xcrun lookup stops the Darwin build; Linux
conditional remains unaffected; `git diff --check` passes. The local
linker does not reproduce the older-linker incompatibility;
affected-runner CI verification is still required.
