Paul Masurel 1dc24c72d1 Make pomsky-intake and quickwit-metrics opt-in in the image build ...

The two extra binaries now default to excluded; callers must pass
--include-pomsky-intake / --include-quickwit-metrics to include them.
The old --no-* flags are kept for backward compatibility but are now no-ops.
