### Rationale for this change
Encrypting columns with nested fields with a column key is not trivial since only leaf fields are allowed in the column key map. Documentation emphasizes this fact and provides examples.

This amends the documentation on encryption for C++ and Python.

Apache Arrow Documentation

This directory contains source files for building the main project documentation. This includes the Arrow columnar format specification.

Instructions for building the documentation site are found in docs/source/developers/documentation.rst. The build depends on the API documentation for some of the project subcomponents.
